1 can each-
whole black beans
small can enchilada sauce
Chicken tenders or shrimp de veined/peeled
shredded cheese (optional)
(onion if desired)
Cook chicken/shrimp in enchilada sauce- probably use the chicken tenders again. use chopped up onion if you want
cut up chicken into little pieces.
combine salsa, cut up bell peppers into little peices and add, as well as beans (use lid to keep beans in can, rinse with water thoroughly) tomatoes don't need to be rinsed just drained, chicken and shredded cheese
This one can be put into tortillas, on top of lettuce, or scooped w tortilla chips, or even just eaten w a fork. beware portions on this one, lots of good fats, protein DO NOT ADD SALT (canned producsts are super high in sodium)
